My Favorite Feel-Good Meals

Nothing feeds both body and soul like a wholesome, home cooked meal. These are my go-to recipes for doing just that. Some are more labor intensive than others and do better as a Sunday dinner and others are easy enough for a quick weeknight meal.

Sweet Potato Hash and Kale Skillet

This is a pretty easy dish for any night of the week and it’s hearty and delicious! You can save extra cooking time if you cook your potatoes in an airfryer.

Lentil Salad

An overall easy dinner but a little prep heavy as it requires a lot of slicing and dicing. Personally, I enjoy slicing veggies especially if I’m listening to a good podcast but it can be a lot during the week. Sometimes I pre-slice my ingredients over the weekend if I plan on making this on a weeknight to save time.

Warm Butternut Squash and Kale Salad

The squash in this recipe makes it a little harder than the others since butternut squash is tough to prep and also takes a long time to cook in the oven. Also all ingredients need to be prepped and cooked separately so it’s not as easy as a one pot meal.

Pasta with Spinach and Mushrooms

This is the ultimate easy weeknight dinner and you can save even more time by buying pre-sliced mushrooms. I substitute chickpea or red lentil pasta for regular noodles for extra protein and fiber.

Green Goddess Salad

It wouldn’t be a list of my favorite things without at least one TikTok recipe. This is the salad that went viral this year and became an internet sensation and it’s well-deserved because it’s amazing. It’s another prep heavy meal that can easily be made in advance. It also makes a lot so it can last several days if you don’t mix it all with the dressing.
